Storage
& Handling
Upon receiving the fruit it should be inspected for quality,
size, count, appearance and level of ripeness with a brix
percent. Mangos should be stored at 55 degrees F and 85%-90%
relative humidity after harvest, and can be stored for up
to two weeks at the proper temperature. Mangos will become
chilled if stored at cold temperatures prior to reaching ideal
ripeness. Do not store mangos with ethylene-sensitive produce,
such as lettuce.
Display
Train your staff to recognize ripe mangos. A ripe mango
will have a fruity fragrance near the stem, should be slightly
soft to the touch and yield to gentle pressure like a ripe
peach or nectarine. Label mangos that are ready to eat, to
help promote quick sale. Mango connoisseurs like mangos that
have begun to shrivel a sign of maximum sweetness.
Shelf-life estimates vary but a conservative approximation
is that the fruit can be displayed for 7-14 days in the produce
department. More display tips in Maximizing
