Lime Cilantro Vinaigrette
- 1 cup lime juice
- 1/2 cup white vinegar
- 2 bunches cilantro, chopped
- 1/4 cup honey
- 1/4 cup brown sugar
- 1 tsp salt
- 1 tbsp fresh garlic
- 3 tbsp dijon mustard
- 3 cups salad oil
In a large plastic container, puree cilantro, lime juice
and vinegar with a hand emulsion blender or use a food processor.
Add sugar, honey, garlic and salt. Puree until smooth. Add
mustard, then slowly add oil in a thin stream while continuously
blending.
Yield: About 4 cups
Note: This recipe can be easily halve
