Limes have gone the way of the tomato in that, for economical reasons, the more flavorful Key Lime has taken a back seat to the Persian Lime. But real lime connoisseurs and Key Lime Pie fans still adore the small and humble-looking Key.

Key limes are smaller than Persian limes, are aromatic and very juicy. They have a stronger, more complex acidic flavor than Persian limes so make a great pie.




Persian Limes are easier to grow, easier to pick because the trees have no thorns, and due to the much thicker skin, are easier and more economical to ship.

Key and Mexican Limes are grown year around so you may be able to find them in your produce department any time! Costs vary throughout the year but are somewhat consistent in Summer, when there is an abundance of fruit from Mexico.

Select limes that are heavy for their size and firm with smooth, shiny skins. Avoid limes that are light in weight, shriveled, spongy, or significantly discolored.

Store limes in your refrigerator. Limes do not ripen further after harvest.

For More Juice you can put a lime in the microwave on high for 5 to 10 seconds. You'll then be able to squeeze out all the juice from the lime!
